Watermelon seeds are very nourishing for the kidneys, which can get taxed during long, high-energy summer days, and are rich in minerals and great for healthy hair and skin. We recommend blending them right in with the rest of the watermelon. Watermelons with seeds tend to be more flavourful.
Makes about two 300ml servings
300g bite-size pieces of ripe watermelon
720ml full-fat canned coconut milk
8 ice cubes
Place all of the ingredients in a blender and blend for approximately 2 minutes, until cool and creamy. Serve immediately.
